Slow Cooker Italian Beef Sandwiches

3 lbs beef chuck roast
1 packet Italian salad dressing mix
1 cup beef broth
1/2 cup pepperoncini pepper juice
1/4 cup jarred pepperoncini peppers, sliced
1/2 cup giardiniera (Italian pickled vegetables), chopped
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes
4 cloves garlic, minced
6 hoagie rolls, split
Provolone cheese slices (optional)


Place the beef chuck roast in a slow cooker.
In a bowl, mix together the Italian salad dressing mix, beef broth, pepperoncini pepper juice, oregano, basil, red pepper flakes, and minced garlic. Pour over the beef in the slow cooker.
Add the sliced pepperoncini peppers and chopped giardiniera on top of the beef.
Cover and cook on low for 8 hours or on high for 4 hours, until the beef is very tender.
Remove the beef from the slow cooker and shred with two forks. Return the shredded beef to the slow cooker and mix with the juices.
Serve the shredded beef on hoagie rolls, topped with provolone cheese if desired, and spoon extra juice from the slow cooker over the sandwiches.
