Ingredients:
- 2 cups chocolate chips (dark or milk chocolate, according to preference)
- 1 tablespoon coconut oil
- 3 cups crispy rice cereal
- 1 teaspoon vanilla extract (optional)
- Pinch of salt (optional)
Directions:
- Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until completely melted and smooth. Alternatively, you can melt the chocolate and coconut oil using a double boiler method.
- Once melted, remove from heat and stir in the vanilla extract and a pinch of salt if using.
- Fold in the crispy rice cereal until it’s evenly coated with the chocolate mixture.
- Pour the mixture into the prepared baking pan, spreading it out evenly.
- Refrigerate for at least 1 hour, or until set.
- Once set, lift the bars out of the pan using the parchment paper overhang and cut into squares.
