Cheesy Tortellini Bake

1 (20-ounce) package refrigerated tortellini
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 (24-ounce) jar marinara sauce
1 cup spinach, chopped
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh basil for garnish


Preheat oven to 375°F (190°C).
Cook tortellini according to package instructions; drain and set aside.
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until softened, about 3-4 minutes.
Stir in marinara sauce and spinach, cooking until the spinach is wilted, about 2 minutes.
In a large mixing bowl, combine cooked tortellini, ricotta cheese, half of the mozzarella, half of the Parmesan, Italian seasoning, salt, and pepper.
Spread half of the sauce mixture into the bottom of a 9×13 inch baking dish. Top with the tortellini mixture, then cover with the remaining sauce. Sprinkle the remaining mozzarella and Parmesan cheese on top.
Bake for 25-30 minutes, or until bubbly and golden on top.
Garnish with fresh basil before serving.
