Spanakopita


Just whipped up a batch of this heavenly Spanakopita – Greek Spinach and Feta Pie that’s bursting with flavor! Perfect for any meal of the day! 😋🌿

Ingredients:

1 lb (450g) spinach, washed and chopped
1/2 cup olive oil, plus more for brushing
2 large onions, finely chopped
2 cloves garlic, minced
1 bunch green onions, chopped
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
8 oz (225g) feta cheese, crumbled
4 eggs, lightly beaten
Salt and pepper to taste
1/2 teaspoon grated nutmeg
1 package (1 lb) phyllo dough, thawed


Directions:

Preheat oven to 350°F (175°C).
Heat 1/4 cup olive oil in a large pan over medium heat. Add onions and garlic, sauté until soft.
Add spinach in batches, cooking until wilted. Remove from heat, press out excess liquid.
Stir in green onions, dill, parsley, feta, eggs, nutmeg, salt, and pepper.
Brush a 9×13 inch baking dish with olive oil. Lay a sheet of phyllo in the dish, brush with olive oil, and repeat with half the phyllo sheets.
Spread the spinach mixture over the phyllo. Top with the remaining sheets, brushing each with olive oil.
Cut into squares or diamonds before baking.
Bake for 40-45 minutes, or until golden and crisp.
