Egg Drop Soup

4 cups chicken broth
2 eggs, lightly beaten
1 tablespoon cornstarch
2 tablespoons water
1 green onion, finely chopped
Salt and white pepper to taste
A few drops of sesame oil


In a large saucepan, bring the chicken broth to a simmer over medium heat.
In a small bowl, mix the cornstarch with water until smooth. Stir this mixture into the simmering broth.
Slowly pour the beaten eggs into the broth, stirring gently with a fork to create egg ribbons.
Season with salt and white pepper to taste. Add a few drops of sesame oil for fragrance.
Garnish with green onion before serving.
