Ingredients:
2 pounds beef sirloin, cut into 2-inch strips
2 bell peppers, sliced
1 onion, sliced
3 cloves garlic, minced
1/4 cup soy sauce
1 tablespoon cornstarch
1/2 cup beef broth
1/4 cup water
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon black pepper
2 tomatoes, chopped
1/4 cup fresh parsley, chopped
Directions:
Place the beef strips in the crockpot.
Add the bell peppers, onion, and garlic on top of the beef.
In a small bowl, whisk together the soy sauce, cornstarch, beef broth, water, sugar, salt, and black pepper until smooth. Pour this mixture over the beef and vegetables in the crockpot.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
About 30 minutes before serving, add the chopped tomatoes to the crockpot. Stir gently to combine.
Just before serving, sprinkle with fresh parsley.
