Ingredients:
- 1 bottle white wine (750 ml), preferably a dry variety like Sauvignon Blanc
- 2 cups pineapple juice
- 1 cup coconut rum
- 1/2 cup club soda
- 2 cups diced pineapple
- 1 cup diced mango
- 1/2 cup shredded coconut, toasted
- Fresh mint leaves for garnish
Directions:
- In a large pitcher, combine the white wine, pineapple juice, and coconut rum. Stir well to mix.
- Add the diced pineapple and mango to the pitcher. Refrigerate for at least 2 hours to allow the flavors to meld.
- Just before serving, stir in the club soda for a refreshing fizz.
- Serve in glasses garnished with toasted shredded coconut and fresh mint leaves.
